I find it amazing how often the servers interrupt players while they are in a hand.

Have they not been instructed to be cognizant of what is happening at the games they are taking care of?
I do not need to be tapped on the shoulder to be informed that my drink has arrived when in the middle of a decision for several hundred dollars.

Additionally many of the servers arrive at the table say "service" once and if no one answers immediately they are off to the next table, do they just not realize the players attention may be focused elsewhere?

I understand that time is money for these people, but their job IS to take care of the customer, not just come by turn of the service light that is flashing( which means its been on for a while and indicates to the F&B manager a particular server hasn't been to the that table in a certain period of time), mention "seeeeervice" and dart off to the next table.

THAT said there are also number of servers who are very aware of what is happening and are mindful of the action...but they are outnumbered.

Yes, at one point they were told to wait until a player is not in a hand to ask them what they need.  Some servers will lean around a player to look, and others will just walk away in a huff.  And there is always that battle going on between the server trying to get the order of a player, and the table trying to get the attention of the player to act on his hand preflop.  I had this gem happen because of servers in the 40/80 game....

First guy in limps, next folds, guy next to me limps, and I raise all fold to BB who calls and both limpers call.  At this point service comes over and the BB and first guy are trying to order.  Dealer puts out flop, and action is on BB who is ordering.  First limper gets done ordering, looks at board, and folds, guy next to me who is paying slightly more attention than the other two notices his fold and assumes I have bet, so he folds, and then BB is done ordering, glances up at board, sees mucked cards, and mucks his as well.  I just won a $340 pot without even having to bet on the flop because all three were hardly paying attention because two of them were busy ordering.
